mom’s stuffed peppers

Excited to share this super easy recipe with you!

My mom has been gluten-free for about a year now due to some health reasons. Which if you know my mom it hasn’t stopped her from still making amazing food! I love her to death but she is one of those annoying people that can throw anything together, not look at a recipe and it tastes AMAZING! I literally don’t think she owned measuring spoons or cups until a couple of years ago! And don’t even try and ask her how she made it because she always replies, “Well I don’t know, its just a little of this and a little of that and then you mix it up!” Seriously how this type A daughter who always use a recipe and has multiple sets of measuring spoons in different colors came from her is unknown! She seriously is one of the most amazing cooks I know, so when she started cooking gluten-free I had no fear my mom would kill it every time.

A couple of weeks ago she threw together this super easy side-dish/snack/appetizer and I literally had to ask her about three times what exactly she did so I didn’t miss any steps.

She took small banana peppers and put them in the microwave for 10 seconds to soften them up. Then rolls a piece of salami with a piece of basil around a cheese stick cut in half and puts it inside the pepper. (Yes I did just text my mom to ask if the cheese stick was whole or cut up!) She placed them on a tray and stuck them in the oven at 350 for about 10-15 minutes. When they came out we dipped them in some marinara sauce! The cheese had melted perfectly and the sauce was a perfect addition.

Super easy and super delicious!

You can always be like me and rationalize that because you didn’t have any bread at dinner it totally means you can have some ice cream for dessert!!!
