Quick and Easy Lettuce Wraps

Every once and a while a recipe that has mouth watering pictures actually lives up to its pictures and tastes as good as is looks on pinterest.  This is one of them!  If your looking for an easy healthy dinner that has amazing flavors, check this out.  We had this last week and I quick took this pic before we scarfed it all down!

Turkey Lettuce Wraps


  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • Kosher salt and freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  •  small pkg mushrooms, chopped
  • 1 small onion, diced
  • 1/4 cup hoisin sauce or general tso sauce
  • 2 tablespoons soy sauce
  • 1/2 teaspoon freshly grated ginger
  • 1 cup cooked  brown rice
  • 3 green onions, thinly sliced
  • Romaine lettuce, for serving


  • Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat and set aside.
  • Add garlic, bell pepper, mushrooms, and onion to the saucepan. Cook, stirring frequently, until tender, about 3-4 minutes.
  • Stir in whatever  stir fry sauce (hoison or general tso), soy sauce, ginger and ground turkey until well combined. Add rice and green onions and gently toss to combine.
  • To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf.
  • We added Gyoza dipping sauce from Trader Joe’s drizzled on top of each lettuce cup.

I keep thinking about how many different combinations you could make with this.  We didn’t have any hoison sauce but I did have this Target brand of General Tso’s sauce and it worked out great.  If your looking for a great meal to make this week – try this out!
